  5. First heat up the oil and place one onion ring in the oil to test it out before cooking the rest. This will assure that the oil is hot enough to crisp your onions but not too hot to burn them.
  6. Fry in your oil at 285 degrees, for only about 1 minute on each side. 
  7. Gently remove the rings from the oil and drain on paper towels.
  8. Serve.

  3. Cook the chicken for 5-6 minutes or until it has browned on all sides. Remove the chicken from the skillet and set aside. 
  4. In the same skillet add the cheese sauce ingredients: butter, garlic, almond milk, cream cheese and 1 cup of the cheddar cheese. Heat over medium heat stirring occasionally. When the cream cheese has broken up whisk the mixture so it is completely smooth. A thick cheese sauce will form. 
  5. Add the cooked chicken and broccoli to the skillet. Carefully stir so the mixture coats the chicken and broccoli well. Top with the remaining cheddar cheese.
  6. Bake for 20-25 minutes. Remove the skillet from the oven and allow it to cool for 10 minutes. This is important because the cheese sauce thickens as it cools.

Easy Mongolian Beef Recipe

I talked in this recent submit of my FOF (worry of frying) and how I vowed to overcome that worry. With this recipe, I have taken on that undertaking. Crispy fried strips of pork (so crispy!) with a delicious, thick, sweet sauce. The colour is so lovely and the flavors so super. I may want to NOT wait to eat the leftovers tomorrow.


It actually turned out to not be that frightening. My fears of the batter not sticking and the beef being raw inner had been tackled with multiple easy steps.

First, I began with my pork. Placing it in the freezer for 15 minutes absolutely enables firm up the steak so you can get a pleasant, thin slice. I figured that with slices this thin, it’s surely tough to now not fully cook dinner the meat regardless of only a quick frying. Check one!

INSTRUCTIONS:

  1. Place the beef in the freezer 15 minutes before ready to begin. This will help firm it up for slicing.
  2. Slice the beef against the grain in thin, bite-sized strips, about 1/4 inch thick.
  3. Add the cornstarch to a Ziploc bag. Place the meat in the bag and shake, until well coated. Pour out into a strainer or colander and shake off the excess cornstarch.
  4. In a small sauce pan add the oil, soy sauce, brown sugar, garlic, ginger, water, rice wine vinegar and red pepper flakes. Stir and cook over medium-high heat until sauce thickens (15-20 minutes). Set aside.
  5. Meanwhile, in a large skillet heat the oil over medium-high heat. When the oil is hot, add some of the beef in a single layer and cook until browned. You will need to do this in batches. Set aside the browned beef on a plate lined with a paper towel and tented with foil.
  6. Return all beef to skillet and pour sauce over the beef. Stir until coated and cook for a couple more minutes.
  7. Serve over rice and garnish with green onions.

INSTRUCTIONS:

  2. Add the sausage to pot drippings and brown on both sides, adjusting heat as needed so fond (brown bits on the bottom of the pot) does not burn. Remove to the plate with bacon; set aside.

To assemble:

  •  1 large red onion, sliced thin
  •  1 batch Tzatziki Sauce
  •  1-2 cucumbers, sliced
  •  2-4 tomatoes, sliced
  •  fresh dill, to garnish, optional
  •  8-10 pita rounds

INSTRUCTIONS:

  1. Start by making the Tzatziki Sauce. It needs time to marinate, so get it done first so it can sit in the fridge while you make the rest.
  2. Make the gyro meat. Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper. Or line with foil and spray with nonstick spray.
  3. If you have a food processor, use it to finely chop the onion and garlic. If not, use a knife to chop finely.
  4. In a large bowl, add all gyro meat ingredients: 1 pound ground beef, 1 pound ground lamb, 2 tablespoons butter OR bacon grease,* 2 eggs, 1/2 cup milk, 2 tablespoons lemon juice, 1 cup Panko crumbs, chopped onion, minced garlic, 4 teaspoons kosher salt (see note), 2 teaspoons black pepper, 2 teaspoons oregano, 1/2 teaspoon rosemary, 1 teaspoon thyme, 2 teaspoons cumin, 1 teaspoon marjoram. (It's ok if you don't have the marjoram.)
  5. Combine the meat using your hands. I like to wear disposable gloves when I do this. Using your hands feels a little weird, but it mixes the meat so much faster and more evenly than using a spoon, resulting in nice tender meat (as opposed to being overworked.)
  6. Shape the meat into about 10 oval patties. See photos. Line them up on the pan making sure they are not touching each other.
  7. Bake at 350 for about 15-20 minutes, or until a meat thermometer reaches 160 degrees F. Remove from the oven and keep warm.
  8. Meanwhile, prepare the gyro toppings: Thinly slice a red onion. Slice the tomatoes. Slice the cucumbers. Warm the pita bread either in the microwave or in the still-warm oven. Chop extra fresh dill, if you want.
  9. How to construct your gyro: Add a layer of Tzatziki Sauce to a warm pita. Slice a gyro patty in half lengthwise for easier eating, and place on top of Tzatziki. Garnish with red onion, tomatoes, cucumbers, and fresh dill. Devour!
  10. Gyros are traditionally served with french fries, or you could try it with these 3 ingredient Roasted Potatoes. It would also be great served with this Greek Salad!

INSTRUCTIONS:

  1. This recipe uses a 9x13 baking pan. In this recipe I think it is best to line to lightly grease the pan and line it with parchment paper so that you can lift the entire batch out of the pan after they have cooled and cut them on a cutting board. With cookie bars like this, which have different textures in the different layers, this enables you to have a more precise feeling for how to cut them well. More about that a little later in the recipe.
  2. Preheat oven to 350 degrees F for aluminum bake ware and 325 degrees F for glass bake ware.
  3. Mix together the 1/34 cups flour and ½ cup sugar. Rub the butter through the flour mixture until it is well incorporated and resembles a dry coarse meal. (You can pulse the butter into the flour mixture using a food processor if you prefer.)
  4. Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan and bake for 20 minutes. The edges should just be starting to brown. Remove from oven and pour on the topping while still hot.

To prepare the top layer of the cookie bars:

  1. Mix together the flour and brown sugar well. This will ensure there will be no lumps of either flour or brown sugar in you cookie bars when baked. Whisk in the eggs, vanilla extract, salt and corn syrup.
  2. Let the mixture stand for about 15 minutes while the bottom layer pre-bakes, stirring it occasionally. This gives the flour time to soften and help thicken the top layer.
  3. Mix in the chopped pecans and pour the topping over the partially baked bottom crust as soon as it comes out of the oven.
  4. Return the pan to the oven and bake for an additional 40-50 minutes until the filling is set. Times vary a few minutes depending on the baking pan material. Shake the pan a little. The center can wobble a little like set jelly but it should not be runny.
  5. Cool the pan to room temperature before chilling the cookie bars in the fridge for several hours or overnight before attempting to cut them
  6. I lift the cookies from the pan after they have fully cooled in the fridge and lay them out on a cutting board. I've found the best thing to use is a sharp serrated knife held horizontally to saw through the nut layer before pushing on through to the softer layers below. I cut one entire row of cookies off at a time and then cut each row separately into individual cookie bars.
  7. As these are quite rich I tend to cut them a little smaller than other cookie bars.

INGREDIENTS:

  • 6 Tbsp golden rum divided
  • 1 1/2 cups espresso (or strong coffee), room temperature
  • 6 egg yolks (large)
  • 40 ladyfingers
  • 3/4 cup granulated sugar
  • 16 oz mascarpone cold
  • 2-3 Tbsp unsweetened cocoa powder to dust the top
  • 2 cups heavy whipping cream cold

INSTRUCTIONS:

  1. In a bowl, stir together 1 1/2 cups espresso and 3 Tbsp rum. Quickly dip half of the ladyfingers, one at a time and arrange in a single layer in the bottom of a 9x13 casserole dish. Dip once on each side so they are moist but do not soak ladyfingers or the cake will collapse.
  2. Whisk together yolks and sugar. Place over steam (on a saucepan with simmering water) and whisk 9-10 minutes on low heat until the mixture is lighter in color and slightly thickened. Remove from heat and let cool slightly while doing step 3.
  3. Beat together 16 oz mascarpone and 3 Tbsp rum. Use an electric hand mixer to beat in the warm yolk mixture until well incorporated.
  4. In a separate bowl, beat cold heavy whipping cream until medium peaks form (about 3-4 minutes). Use a spatula to fold half of the whipped cream into mascarpone cream then blend in remaining whipped cream, just until incorporated. Do not overfold or it will become grainy.
  5. Spread half of the cream over the first layer of ladyfingers. Dip and arrange remaining ladyfingers. Spread remaining cream. Refrigerate overnight. Dust with cocoa powder before serving. It is ok to dust with cocoa ahead of time - it will just darken it in color from the moisture.

Nutella Crunch Ice Cream Cake

INGREDIENTS:

  • 2 cups Nutella
  • 1 gallon vanilla ice cream
  • 6 cups Rice Krispies cereal

INSTRUCTIONS:

  1. Place a 9 or 10 inch springform pan, as well as a very large mixing bowl in the freezer to chill.
  2. In a large saucepan over low heat, combine the Nutella and Rice Krispies cereal. Mix well until the Rice Krispies are completely coated with the Nutella. Remove from heat.
  3. Line a sheet pan or cookie sheet with parchment or wax paper. Pour the Nutella-Rice Krispies mixture onto the lined sheet pan and spread evenly. Then place in the freezer to chill.

  5. After about 30-45 minutes (you want the Nutella coated cereal to be cooled and firm but not frozen at this point) – using a fork and knife – cut the coated cereal into bite sized pieces. Place back into the freezer, if necessary, until the ice cream is softened.
  6. Once your ice cream is softened (it should be just softened enough to stir in the coated cereal but not so melted that it is runny), remove the Nutella-cereal pieces, the large mixing bowl and the springform pan from the freezer.
  7. Reserve 2 cups of the Nutella-cereal mixture.
  8. Quickly combine the ice cream and remaining coated cereal in the chilled mixing bowl, then pour the mixture into the chilled springform pan, packing it firmly so that there are no air pockets. Top the cake with the reserved Nutella-cereal mixture.
  9. Cover with plastic wrap and place the springform pan back into the freezer for at least 4-6 hours or overnight until completely frozen.
  10. Remove the cake from the freezer about 30-45 minutes before serving and place in the refrigerator to soften a bit.
  11. When ready to serve, place the cake on a platter or cake stand and remove the sides of the springform pan. Cut and serve immediately.
